Gluten-Free Blueberry Muffins

Bakery-style blueberry muffins made by creaming butter and sugar, with an optional sugar topping. Fresh or frozen blueberries both work.

Ingredients

  • 275 g (2 cups) gluten-free all-purpose flour
  • 10 ml (2 tsp) gluten-free baking powder
  • 2.5 ml (1/2 tsp) salt
  • 113 g (1/2 cup; 8 Tbsp) butter, softened
  • 170 g (3/4 cup) granulated sugar
  • 2 large eggs
  • 5 ml (1 tsp) vanilla extract
  • 120 ml (1/2 cup) milk
  • 480 ml (2 cups) blueberries
  • 50 g (1/4 cup) granulated sugar, optional, for topping

Method

  1. Preheat the oven to 175°C/350°F. Lightly grease 15 muffin cups or line with paper liners.
  2. Whisk the flour, baking powder, and salt in a small bowl; set aside.
  3. In a large bowl, combine the butter and granulated sugar; beat on medium-low speed until thick. With the mixer running, add the eggs and beat until combined.
  4. Add the dry ingredients and mix on low speed until thick. Stop the mixer; add the milk and vanilla and mix until a thick batter forms.
  5. Gently fold in the blueberries with a rubber spatula. If using frozen or cold blueberries, the batter will become very thick; this is normal.
  6. Spoon the batter into the prepared muffin cups, filling each about two-thirds full. Top each muffin with about 5 ml (1 tsp) granulated sugar (optional).
  7. Bake until a cake tester inserted into the center comes out clean, about 25 min.
  8. Cool in the pan for 5 min; transfer to a wire rack to cool completely.

Notes

  • This recipe has not been tested with other flour blends.
  • Lemon blueberry: Add the finely chopped zest of one lemon to the batter with the milk.
  • Blueberry walnut: Stir 1/2 cup chopped walnuts into the batter before adding the blueberries.
  • Frozen blueberries do not need to be thawed before using.

Storage

  • Store cooled muffins covered at room temperature for about 3 days, or freeze up to 2 months. Thaw at room temperature; avoid overheating if using a microwave thaw function.
