The Checked Kitchen

The book

A thousand gluten-free recipes, checked line by line.

Most gluten-free cookbooks warn you once, at the front, then write “flour” for three hundred pages. This one puts the check on the ingredient line, where you are actually reading it.

Why this one

You already know bread has gluten. Nobody needs a book for that.

What catches people is the baking powder cut with wheat starch, the soy sauce brewed with wheat, the stock cube, the malt in the vinegar, the “natural flavoring” on a spice blend. These end up in recipes unremarked, because the author assumed you would remember a note from page four.

Every recipe in this book was read line by line and every processed ingredient was either qualified or corrected. The numbers below were counted, not estimated.

126 recipes

Baking powder

Marked certified gluten-free every time it appears. Wheat starch is a common filler and almost nobody thinks to check it.

117 recipes

Broth & stock

Cubes and concentrates are a frequent hiding place, so the line says which kind to buy.

65 recipes

Soy sauce

Conventionally brewed with wheat. Every recipe that calls for it names tamari instead.

Never flagged

Cider vinegar

Naturally gluten-free. Knowing what you can stop checking is half of what makes this liveable.

Before you spend anything

Read forty-two pages of it first, free.

The book is new and has no reviews yet. We are not going to ask you to take that on faith. The starter kit is drawn from the same book and written the same way — seven days of meals, a shopping list arranged the way a shop is arranged, and a restaurant card. If the method is not what you want, you will know in ten minutes and it will have cost you nothing.

And if you buy and it is wrong for you: write one line within thirty days and we refund it, with no questions and no form. You keep the files — we are not going to pretend we can take them back, and asking you to delete them would be theatre.

Everything that is in it

Six reference chapters, then every category a kitchen actually cooks from.

This is not a book of a hundred cakes with a gluten-free label on the cover. It is a general cookbook — breakfast, dinner, bread, desserts, drinks, six world cuisines, batch cooking, holidays, ferments and the pantry basics you rebuild when you go gluten-free. Every recipe is different from every other; nothing is padded with variations of the same thing.

  1. 1Where to Start The first week, and what actually changes.
  2. 2Setting Up the Kitchen Shared toasters, pans, pasta water, and what has to be separate.
  3. 3Reading the Label US, UK and EU rules, and why “contains: wheat” is not a gluten check.
  4. 4Flours and Binders What each flour does, and how blends behave.
  5. 5The Ingredients That Need Checking The reference chapter, laid out in supermarket order.
  6. 6Eating Out and Traveling The questions that decide whether a meal is safe.

Questions worth asking

Before you buy

Do I have to enter a discount code?

No. The opening price is applied for you when the checkout opens — you will see $19 with the $29 crossed out, and the discount named in the total. It runs out after two hundred copies, and when it does this page will say $29 instead. There is no countdown clock here, because the limit is a real number of copies rather than a timer that resets when you reload.

How many recipes exactly?

A thousand is the number we promise, and it is rounded down: the book contains 1,032. Down is the only honest direction to round. Every figure here was counted rather than estimated — the recipes, the categories, the 126 recipes that call for baking powder — and rounding down is what that habit looks like on a cover.

What exactly do I get, and how fast?

Both files, EPUB and PDF, in the same purchase. The download links are emailed to the address you pay with, within a minute. If they have not arrived in five, look in Promotions or Spam — mail about food allergies lands in odd folders more often than it should — and if it is genuinely not there, write to us and we send them by hand, usually the same day.

Will tax be added?

It depends where you live. The price is in US dollars and your country’s tax, if any, is added at the checkout. You will see the exact total on screen before you enter a card.

Does the book have photographs of the food?

No. It is illustrated rather than photographed. A photo beside a recipe makes an implicit promise about how yours will look, and this is a book you cook from rather than look at. That choice is also why it costs a fraction of what a photographed cookbook costs.

Is the book certified gluten-free?

No, and no cookbook can be. Certification marks such as the Crossed Grain or the GFCO mark apply to food products made in audited facilities. They are not issued to books, and anyone showing one on a cookbook cover is misusing it. What this book does is tell you which products in your kitchen need to carry that mark.

Does the title mean the food is guaranteed safe?

No. Nothing printed can guarantee that, and this book does not claim to. Safety in practice depends on three things the book cannot control: the product you buy, the surfaces you cook on, and your own threshold. What the book guarantees is narrower and checkable: every processed ingredient carries its qualification on its own line, so you always know what to verify.

Can I trust a cookbook that was not written by a doctor?

It is a cookbook, not medical advice, and it says so plainly on the copyright page. It does not diagnose, treat, or replace your dietitian. Its claim is narrow and testable: every processed ingredient is qualified on its own line, and the reference chapter explains what each check is for.

Is there a paperback?

No. At 1,692 pages it is past the limit any print-on-demand service will bind, and splitting a reference book into volumes makes the index useless. It was built as a digital book on purpose.
